Our domaine:
Comprises 17 hectares of A.O.C. Sancerre, with vines aging from 10 to 80yrs. The soil on our hillsides is chalky-loam with flintstone showing many small rocks which ensure a good balanced development of our vines. Our viticulture practices are environmentally friendly in order to let our terroirs best express themselves.
Our cellar:
Our ancient vaulted cellars, located only 500m. from the vineyards, lie below a 12th.C. Romanesque chapel across from the Château. The chapel itself was built on the site of a Gallo-Roman temple with a freshwater spring (remains of the temple are kept in a museum in Bourges).
In order to best respect our terroirs, our wine-growing methods are kept as simple as possible:
- Mechanical harvest with some hand-picking for the older vines;
- Low pressure pneumatic presses;
- Elimination of suspended matters and selection of the finer lees;
- Slow fermentation in temperature-controlled vats (13° to 18°C) with neutral yeasts ensuring the best expression of the grapes.
- Regular stirring of the fine lees.
- Devatting. The wine of different vats is assembled before bottling.
